Recipe: Sticky Sweet Potato Protein Brownies (Paleo Friendly)

So, as me at Matt are trying out the Paleo Diet this month, I decided that I HAD to have some sweet treats to get me through. Enter sweet potato brownies!! Conventional? No – but surprisingly moist and yummy and moreish! We just added protein for the extra hit we needed to reach my macro goals πŸ™‚

(Makes 8 servings)

3 small sweet potatoes (roughly 300g), peeled and chopped

1/4 cup 100% cacao powder (we use Hershey’s)

1/4 cup ground almonds

2 scoops chocolate protein powder (we use this one)

6 Medjool dates, pitted & chopped

1/4 cup raw honey

1/4 tsp baking powder


Β – Heat oven to 180 degrees (Celsius)

– Boil sweet potatoes on hob until soft, drain water and allow to cool for 5 minutes

– When cooled, add all ingredients into a food processor and whizz up until smooth

(if you don’t have a food processor, chop up the dates and melt them with the honey in a small pan, then add this mixture to the rest of the ingredients in a bowl and use a electric whisk/hand whisk to mix up – this is what I do!)

– Pour this mixture into a lined loaf tin and pop into the oven for 20-25 minutes (or until toothpick comes out clean)

– Remove from tin and leave to cool on cooling rack before cutting

(I know – it’s tempting to eat it warm, but believe me, it’s so much yummier when cooled and refrigerated a bit)

– Cut into 8 even slices, and enjoy!!

This brownie keeps in the fridge for over a week, but it won’t last that long!!
