Recipe: Clean Fruit Crumble

I don’t know about you…but I love a crumble. Especially when the nights get colder and you want a yummy comforting dessert. OK, I know I live in the dessert and it’s not exactly cold, but I am thinking of you UK peeps.

I’ve adapted the recipe slightly from the Women’s Health Middle East version, so please have a look below to get all of the details:

(Serves 4)

Crumble Topping

1 cup rolled oats

1/2 cup dessicated coconut (unsweetened)

1/4 cup almond flakes

2 tbsp raisins/currants

1 tbsp raw honey

1 tsp coconut oil

Fruit Filling

400g Berries (frozen or fresh works fine)

2 tbsp raw honey

– Heat oven to 180 degrees

– Mix together all of the crumble topping ingredients apart from the coconut oil, and pop into a blender

– Whizz up the blender for a minute to break down the components

– Put some coconut oil in a frying pan on medium-high heat and add the crumble topping

– Stir continuously until the topping starts going golden brown, then remove from heat

– In another pan, heat the fruit & honey until the juices start running from the berries

– Split this mix into 4 ramekins, add the crumble topping and pop in the oven for 10 minutes until top is crispy

– Serve as it is or treat yourself to a bit of custard or ice cream 🙂
