Recipe: Sweet Potato Cottage Pie…

If you didn’t know already, this week is British Pie Week – so I thought I’d give you my simple recipe for Cottage Pie. Yes, it might not be the lowest calorie meal, but it’s a nice little home-cooked addition to your weekly menu!



1 tablespoon Olive Oil

500g Minced Beef (below 15% fat – I’m using 12.5%)

1 Onion, Chopped

2 Carrots, Chopped

2 Parsnips, Chopped

2 tablespoons Tomato Puree

1 Can Chopped Tomatoes

1 teaspoon Mixed Herbs

200g Frozen Peas

600g Sweet Potatoes, Peeled/Chopped

1 tablespoon Light Margarine

50g Light Cheese


Preheat oven to 180°C or 160°C fan assisted

 Heat oil in large saucepan over a medium heat. Add onion, carrots and parsnips and cook for 3 or 4 minutes until onion has softened. Add the mince and cook for 5 minutes or until browned.

– Then add the tomato paste, chopped tomatoes and herbs. Bring to the boil and then reduce heat to low. Simmer for 20 to 25 minutes until thickened. Stir in the peas and cook for 5 more minutes. 

 – Meanwhile, cook the sweet potatoes in a saucepan of boiling water until softened (about 10 minutes). Drain, return to pan and add low fat margarine. Mash until smooth. Spoon beef mixture into an ovenproof dish and top with potato mixture. Sprinkle with cheese and then bake for 30 to 35 minutes or until golden. Serve.
